Empananda Experiment Tip #3
If you decide to use wonton/egg roll wrappers, DO NOT BAKE them! They come out chewy and tough.
Empanada Experiment Tip #2
If frying, let your grease get hot, but not TOO hot… No one wants “Cajun Empanadas”
Empanada Experiment Tip #1
ALWAYS chop fillings very small. You want your Empanadas to close up nicely during cooking so small fillings are best.
Why The Empanada Experiment?
Growing up, my surrogate grandmother Lita used to always make Empanadas for us. Lita was from Bogota Colombia. We LOVED Lita’s Empanadas. She always used ground beef, onions and chopped hard boiled eggs. Whenever there were Empanadas, there were always arepas too. Living in Flatbush, Brooklyn, an area populated heavily by West Indians, I’ve eaten my fair share of Beef Patties, which...

String Beans
Whether you call them string beans, green beans, or haricot vert, these are by far one of my favorite foods. I honestly will probably eat the whole plate. Why would anyone ever over cook them, use the ones from the can or GASP! smother them with those unsavory cream sauces. I like mine with a little crunch to them. These were sauteed with black bean sauce & roasted garlic and are...
Empanada Experiment
Tomorrow, Friday, July 30th, @candice202 and I will be participating in the EMPANADA EXPERIMENT. Many different doughs/shells….Hundreds of different fillings….well maybe not hundreds, but we’re gonna get really creative with it. We’re going savory…We’re going sweet… We’ve got some crazy combos in mind… tune in tomorrow for the results….

A Tisket, A Tasket...What to Put in a Picnic...
Picnics combine two of my favorite things: Sunshine and Food. Summertime always seems too hot to me for picnic lunches, unless I’m taking mine on the beach. But there is nothing quite like a romantic picnic dinner in the park. Near the lake in Prospect Park in Brooklyn is the perfect backdrop for a lovely picnic dinner with someone special. If you’re lucky and there’s a...
What's Summer Without a Peach? →
I have a relative who always said I was” a peach of a girl.” Once, as a thank you present, a friend of the family sent me a bushel of peaches. Alas, somewhere in my mid-twenties I developed an allergy to fresh peaches that was akin to mild anaphylactic shock. Something about the histamine in them. Sometimes, I just can’t resist and I pop a couple of benadryl and go to town.

The connection between food and sex us is one that we really need to stop trying to ignore. Delicious food can conjure the same overwhelming sensations as a kiss. Hunger can mirror the anticipation of wanting to see an estranged lover. The body doesn’t know the difference in the two pains… In this, is one of my favorite musical songs from Leonard Bernstein’s 1944 “On The...
Summer Grilled Corn →
I too like the lime flavoring of Mexican style corn but my waistline just can’t stand the fat of the mayo. (Sidebar: hot mayo just skeeves me.) Instead of mayo, next time mix softened butter with lime zest, spread it on each ear of corn, and roll it in a mixture of shredded parmesan and freshly ground pepper. MMMMM!!! Delightful, delectable, deliciously divine.

Summer 'Shrooms
Grilled Mushrooms
6 servings The best mushrooms for grilling are portobellos and shiitakes. Portobellos are cultivated mushrooms, of the Cremini variety, grown large. They are generous in size (up to 6 inches wide), meaty, and robustly flavored. Their open gills and large flat caps make them naturals for grilling and broiling. They are also useful in sautés. Shiitakes are brown or...
